Those eggs look rather like a dinner though, than like breakfast. Far too heavy for my tast, I think. (and too non-vegetarian, of course ^^)

Many (most?) places will also have Eggs Florentine (at least from amongst those who serve this in the first place; e.g. over in Australia and the USA), which replaces the bacon with spinach. Half my friends seem to be vegetarian, and this is often their dish of choice when we go brunching.
It's not all that heavy either, really. At least, I've been known to gobble down a stack of pancakes next to the Eggs Benedict. Erm..., though I guess maybe my eating habits are atypical... *g*
